Double Chocolate Flourless Brownies

Green Zone Chocolate Brownies

Ingredients:Healthy vegan chocolate brownie

1 15oz can black beans, rinsed and drained

½ cup pure pumpkin puree

½ cup dark cocoa powder

2 flax eggs (2 tablespoons ground flaxseed + 4 tablespoons water. Mix, let sit for 10-15 minutes)

1 tablespoon apple cider vinegar

1 teaspoon vanilla extract

½ cup rolled oats

3 organic stevia packets

2 tablespoons agave

2 tablespoons unsweetened coconut milk

1 teaspoon baking powder

1 teaspoon cinnamon

3 tablespoons dark chocolate chips (Ghiradelli 62%)Gluten Free Brownie

 

Directions:

  1. Preheat oven to 350 degrees and spray 8×8 baking dish with non-stick cooking spray (you can also use an 8×6).
  2. Combine all ingredients in blender (except chocolate chips and 1 stevia packet). Blend until smooth.
  3. Pour into a mixing bowl and fold in 2 tablespoons chocolate chips and remaining stevia packet).
  4. Pour batter into baking dish, top with remaining 1 tablespoon chocolate chips.
  5. Bake for 20-22 minutes.
  6. Remove from oven. Let cool 15-20-minutes before cutting.
