Hearty Three Bean Chili

1 medium onion, chopped

2 bell peppers, chopped

1 cup mushrooms

4 cloves garlic, minced

¾ cup celery

1 zucchini, chopped

2 tablespoon chili powder

2 tablespoon ground cumin

½ tablespoon dried oregano

½ tablespoon dried basil

3-4 roma tomatoes, chopped

½ cup organic ketchup

½ cup water

1 6oz can tomato paste

1 can black beans, rinsed and drained

1 can garbanzo beans, rinsed and drained

1 can kidney beans, rinsed and drained



  1. Sautee onions, bell pepper, mushrooms and garlic until soft (about 3-5 minutes)
  2. Add zucchini, celery and spices, cook for 2-4 minutes to soften  celery
  3. Add tomatoes, ketchup and tomato paste, cook for 3-5 minutes
  4. Stir in beans and water
  5. Cover, let simmer on low heat for 30 minutes
  6. Optional: Top with vegan sour cream, chopped green onions or cilantro
