Chickpea Chocolate Chip Cookies

1 can chickpeas

2 tbsp peanut butter

2 flax eggs (2 tbsp ground flax seed + 4 tbsp of water.  Mix, let sit for 5 minutes)

3 tbsp unsweetened applesauce

1 tsp vanilla extract

½ tsp baking powder

½ cup dark chocolate chips (Ghirardelli 62%)

2 organic Stevia packets

Optional: 1 tbsp Agave for added sweetness



  1. Preheat oven to 350 degrees.
  2. Add all ingredients to blender (except chocolate chips)
  3. Blend until cookie dough consistency.
  4. Fold in chocolate chips.
  5. Spoon onto baking sheet, 2 tablespoons per cookie
  6. Bake for 20-25 minutes
