1 15oz can chickpea, rinsed and drained
3 tablespoons vegan mayo
1 teaspoon Dijon mustard
1 tablespoon Walden Farms Pancake Syrup
¼ cup diced onion
¼ cup diced celery
¼ cup diced pickle
1 teaspoon black pepper, onion powder, garlic powder
- Place the chickpeas in a mixing bowl and mash with leaving only a few beans whole.
- Add the remaining ingredients to the bowl and mix with a spoon until well combined.
- Serve on a sandwich with toppings of your choice, serve with crackers or just eat it plain! Store leftovers in a Tupperware container in fridge.
